Cost Controller

MISSION:

“Cost Controller” is responsible for ensuring food and beverage costs are up to date while keeping a record of all Food and Beverage monthly expenses to ensure strict budget control.

Job Summary:

  • Carry out spot checks on bin cards;
  • Prepare daily food & beverage costs;
  • Maintain an up-to-date list of all cost/ prices, ensure that all the cost/price measures and advice on variations;
  • Inform F&B Manager of all over-budget costs and discrepancies in procedures;
  • Participate in monthly departmental stock take activities;
  • Prepare monthly expenditure and monthly stocks balance reports;
  • Attend major banquet events with open bar, prepare P&L statement of major banqueting events and prepare banquet revenue breakdown summaries;
  • Prepare daily flash report of food costs and verify daily outlet void control sheets;
  • Randomly test the inventory of outlets by reconciling the opening stock with the closing stock, taking account of store issues and sales;
  • Assists Executive Chef in maintaining/lower budgeted food/controllable costs.

Requirements:

  • Ability to develop employee knowledge;
  • Communicate clearly and develop relationships with all levels of staff and management;
  • Ability to deal effectively with internal and external customers;
  • Strong analytical skills;
  • Knowledge of financial reports used within hotel environment.

Education/Professional Experience:

  • Specialized High School Degree;
  • 1-3 years previous experience in the function.

Linguistic Knowledge:

  • Good communication skills in English and Portuguese (written and spoken).
